This celebratory cake is based on an old Victoria sponge recipe, but I made a rather large one with no layers, baked in a bundt or ring cake pan. I used fragrant, tiny Ercolini pears (in season here in the northern hemisphere). I adorned the cake with a salted caramel sauce I made and while on the theme: caramel shards. Looks fancy but is so easy to make and takes just a cup of white sugar and a teaspoon of sea salt.

Before you think this crunchie virtuous because of the addition of bran, I’d like to remind you that you’ve got two blasts of chocolate here, albeit it very good chocolate in the form or cacao powder and chunks of 70% cacao chocolate. The cookie will look buttery when hot from the oven but hardens as it cools. Very moreish and a wonderful treat for lunch boxes and tea time sweet cravings.

I’ve had the chance to sample a huge variety of Turkish Delight or lokum as it’s known in Turkey a few week s ago. I used lemon Turkish Delight in these cookies. Using the Quick Treats Flapjack mix to make these lemon scented, lemon flavoured lovlies, which are crumbly and cakey in texture, I took great delight (ahem) in extending the tastes and sounds of my recent visit to Istanbul in the kitchen.

A month or so ago, I enjoyed a dessert pizza at a local Italian restaurant. There’s nothing new about dessert pizzas or using bread as a base for desserts – just think of bread and butter puddings, croissants baked with custard and choc chips and English summer puddings.

A carrot and plum loaf: This loaf is easy to whip up and and a good way to incorporate left over carrots and plums before they can’t be used. The cream cheese frosting is light and the lemon adds a zesty freshness, and is an unexpected delight. The loaf is dense and slightly crumbly and makes a lovely treat for the cooler weather we are experiencing with a hot cup of tea.

I also made this dessert, adapted from my Christmassy Pimms & Star Anise Stewed Plums and Cherries with Amaretti Biscuits. This recipe uses dried pears and prunes and ginger biscuits- a more Easter twist on things, I thought. Also, really very easy. A little sticky and messy, but a delight to eat.
