A carrot and plum loaf: This loaf is easy to whip up and and a good way to incorporate left over carrots and plums before they can’t be used. The cream cheese frosting is light and the lemon adds a zesty freshness, and is an unexpected delight. The loaf is dense and slightly crumbly and makes a lovely treat for the cooler weather we are experiencing with a hot cup of tea.

I was invited to present a dish on the Expresso Breakfast show to celebrate the Thai New Year. I am no expert – the cuisine does not form part of my cultural heritage. But, I have been cooking and eating Thai food since my late teens. I decided to prepare a Tom Yum soup, ideal for this drastic change of weather in Cape Town. That lovely balance between sour and hot. Nourishing but not fattening. Flu-blitzing but moreish. Tom Yum soup, that Thai classic -you can control the heat and the zing as you choose. I often use a sachet of Tom Yum paste but enhance the flavour with fresh limes, chilli, lemon grass, dried lime leaves and a little palm sugar.

I also made this dessert, adapted from my Christmassy Pimms & Star Anise Stewed Plums and Cherries with Amaretti Biscuits. This recipe uses dried pears and prunes and ginger biscuits- a more Easter twist on things, I thought. Also, really very easy. A little sticky and messy, but a delight to eat.

The warm and talented Nina Timm of My Easy Cooking invited myself, Jane-Anne of Scrumptious and Ilse of The Food Fox to spend a morning cooking in her kitchen with some Safari Dried Fruit and Nut products. I chose to make my Moroccan Chicken Tagine, a tried and much loved favourite, to show case the use of dried apricots. I abbreviated the recipe for Nina for her radio show on RSG. Adobo is one of the national dishes, if not the quintessential dish of the Philippines and includes the unique method of stewing meat in vinegar. When the Spanish discovered this local method, they named it adobo, meaning ‘to marinate’ or season. Chicken, pork or seafood is cooked with garlic, bay leaves, peppercorns and vinegar until tender. The vinegar reduces and caramelises in the sauce. This dish can be taken to picnics or transported to functions without refrigeration, as the vinegar acts as a preserving agent.

I made these koftas using really beautiful lamb mince from Frankie Fenner Meat Merchants and I toasted cumin seeds, coriander seeds, curry leaves and a few cardamom pods. Once finely ground in a spice grinder, I added them to the mince. It’s not essential to add them to the mix, as originally this was intended as a quick recipe, but it adds glorious fragrance and flavour – a Food and the Fabulous Endorsed Project

Bacon, eggs beaten with cream, a slice of baguette and spring onions in the convenience of a large muffin cup. In the original recipe I fried finely diced onion till just brown and added that over each bread slice before spooning over the beaten eggs. This recipe is even easier, as you add chives or snipped spring onions for the same oniony taste without the effort. It’s a good way to work in small space and get everyone to enjoy a hot breakfast at the same time, cook included. Looks darn cute too.
