I’ve had the chance to sample a huge variety of Turkish Delight or lokum as it’s known in Turkey a few week s ago. I used lemon Turkish Delight in these cookies. Using the Quick Treats Flapjack mix to make these lemon scented, lemon flavoured lovlies, which are crumbly and cakey in texture, I took great delight (ahem) in extending the tastes and sounds of my recent visit to Istanbul in the kitchen.

For this week’s Woolworths MasterChef SA Spice Challenge, I delve into the wonders of Zanzibar the Spice Island and make a Parsi dish, a prawn dhansak. Freddie Mercury was born in Zanzibar and was Parsi- did you know? Dhansak uses a variety of spices, lentils and in this case mango and pineapple pulp and lime juice. Serve with a mango and pineapple salsa.

Adeus Cape Town and dear, dear friends. Tomorrow morning, after around 24 hours of travelling, via le chic ooh la la city Paris, we will (hopefully) arrive in Lisbon, our new base for the next few months. I fell in love with Lisboa a few years ago and we vowed to return. In the morning, grumpy and in need of a shower and a good breakfast, we look forward to opening up that phrase book and calling out a confident “Bom dia!”

Adobo is one of the national dishes, if not the quintessential dish of the Philippines and includes the unique method of stewing meat in vinegar. When the Spanish discovered this local method, they named it adobo, meaning ‘to marinate’ or season. Chicken, pork or seafood is cooked with garlic, bay leaves, peppercorns and vinegar until tender. The vinegar reduces and caramelises in the sauce. This dish can be taken to picnics or transported to functions without refrigeration, as the vinegar acts as a preserving agent.

Squid or cuttlefish ink takes me to the Mediterranean and remind me of travels to Italy and Spain. I am always on the look-out for unusual or indigenous food items when we explore – sometimes repeat visits yield new items afresh each time. I picked up a box of fine short squid ink vermicelli in Andorra three weeks ago, and with careful packing it made the journey . more or less unscathed. I made this dish with it.

Do you know the story of carpaccio? Yes, it is the Italian word referring to thinly sliced red meat and sometimes fish but is actually named after Venetian painter Vitorre Carpaccio, who was prolific in the 15th century and renowned for his vivid reds.. Also carpaccio has its roots in famous Harry’s Bar in Venice – the story and a refreshing pineapple carpaccio with,mint and praline.

So, while contemplating how I was going to use the delicate squid ink vermicelli, salts, unusual rices, dried mushrooms, tinned anchovies and the hoard of really lovely chocolate (oh, that required much deep and meaningful contemplation), as well as relate the culinary tales of trotting and discovery, I needed an afternoon snack.
Step in, plump ripe figs, sweet and succulent, sprinkled with Spanish pepper smoked salt, extra virgin olive oil, a blob of fresh ricotta cheese, baked and then topped with crispy bacon bits.
