Chicken Tagine with Dried Apricots for RSG with Nina Timm

The warm and talented Nina Timm of My Easy Cooking invited myself, Jane-Anne of Scrumptious and Ilse of The Food Fox to spend a morning cooking in her kitchen with some Safari Dried Fruit and Nut products. I chose to make my Moroccan Chicken Tagine, a tried and much loved favourite, to show case the use of dried apricots. I abbreviated the recipe for Nina for her radio show on RSG. Nina also featured my Moroccan Instant Preserved Lemons with Aromatics.

This bright and zingy chicken pita is the ideal meal for when you don't have time but need the nutrition. The raw julienned beetroot is a sweet take on red cabbage slaw. Personally one I prefer. Instead of mayonnaise, I've used low fat plain yoghurt. By all means use double cream or thick Greek yoghurt if you like.

Rick Stein makes a glorious Bangladeshi Beef Kofta Curry in his book Far Eastern Odyssey and I saw no reason not to substitute with ostrich mince- it's lean, inexpensive and so easily available here in Cape Town. I have made Rick's curry his way (which is a just a tad labourious, but very flavoursome), but I find my way with a few less steps works equally well. If you make this curry the day before, as with most spiced dishes, the spices will mingle and deepen overnight. Always check the seasoning again, before serving.

Indo-Moroccan Spiced Roast Chicken – with spicy pineappple wedges & roasted almonds

My mother called it Tandoori chicken. Roasted on a silver baking tray it would envelop the kitchen in the musky, woody aroma of ground jeera (cumin) and the fresh slices of pineapple she added would caramelise and char slightly, releasing a sweet perfume. Not quite tandoori chicken, but I take those memories and make an Indo-Moroccan spiced roast chicken.

We're speaking here of the zing of fresh ginger, the heat of chilli, the fresh burst of lime, the saltiness of oyster sauce and the warm nuttiness of sesame seeds and sesame oil.
