Berry & Rose Iced Tea

As predicted in my post yesterday- the weather in Cape Town has not abated. Die hard environmentalists have shelved their eco- friendly selves in the deep freezer and have cranked up the air-conditioners.

Here’s a delicious variation on my Apple Iced Tea, inspired by my love of Morocco and my need to cool down. (We’re talking sweat dripping down the backs of legs at 8 30 am here, before you feel like asking to swap destinations)

*Also best made the night before, or a at least 3-4 hours in advance*

Tea for one

Ingredients

Serves 4-6

4 white tea bags (I used the delectable White Rose Petal tea by Rituals, brought back after my last trip to Amsterdam)

500ml freshly boiled water

375ml apple juice

375ml berry or red grape juice

250ml water

100ml blended blueberries & raspberries

few drops essence of rose

ice cubes

rose petals to decorate

Method

Steep tea bags in hot water for 10 minutes, remove and leave  to cool.

Once cool, add to a jug, along with juices and additional water.

Allow to chill in the fridge.

Before serving, add berry pulp to iced tea and mix well.

Place ice cubes in glasses, pour tea over, along with a drop of essence of rose. Sweeten with honey if desired and decorate with rose petals. Enjoy!

*Tip: If you don’t have essence of rose, subsitiute 150 ml rose water (inexpensive and available at most supermarkets in this country) for juice or water *
