Malaysian Vegetable Pickle
This is a perfect recipe to make to give as gifts and I’ve added it to my series called Edible Gifts.
This pickle, with it’s fantastic combination of hot, sweet, sour and nutty (an unusual addition) along with the crunch of the veggies and the warmth of the ginger, makes it a most excellent accompaniment to stews, spicy dishes and the perfect thing to lift a dull sandwich.
The inspiration for this dish is none other than Uncle Rick, Rick Stein from his book Far Eastern Odyssey. Instead of peanuts I used a few tablespoons of a spicy dukkah, which contains ground cumin, cashew nuts, sesame seeds and chilli flakes. I also used green Granny Smith apples for their wonderful sweet-tart bite.
